To create your sourdough recipe enter the desired dough weight followed by the target hydration, the amount of salt and the amount of starter you’d like to use. The weight of the ingredients in grams will be given for you to follow.
If your dough is a little too wet or too dry you can easily adjust the percentage of hydration and the calculator will adjust the other ingredients to maintain the same target dough weight.
You have the option to add different types of flour. For example, you could substitute 10% of bread flour for wholewheat and continue to tweak the recipe until you find the right balance.
Once you’ve fine-tuned your recipe you can easily scale it by changing the target dough weight and the weights of the ingredients will be automatically adjusted.
I used to calculate all of my recipes for my YouTube channel by writing them out by hand and using a calculator. This has saved me countless hours.
