Oval Proofing Baskets
My favourite shape is the oval banneton which is made from rattan. I prefer proofing the dough directly in the rattan basket, but they do come with a cloth if you prefer to use one.
This basket holds 800-850 grams of dough making the perfect sized loaf for my family.

Round Proofing Baskets
If you prefer a round basket then these will suit you well and you can choose the size you prefer. A cloth liner is included.
If you are baking in a dutch oven make sure the diameter of the basket is smaller than the diameter of the pot.

Bread Tins
I use two non-stick Pullman bread tins by Chef Made. I’ve been using these tins for over 2 years now and they have lasted very well. The non-stick coating is still in perfect condition, although I take very good care of my equipment.
The lid is a great addition for baking Pain de Mie or Hokkaido milk bread.
